Gluten-Free & Dairy-Free Recipe: Sneaky Black Bean Avocado Brownies

Are you looking for ways to sneak some fiber and healthy fats into your kids, while also easily adapting to various food allergies? Here’s a yummy affordable recipe for black bean avocado brownies — and these are also gluten free and dairy free, with no special flours needed!

Ingredients

• 15.5 oz can black beans, rinsed and drained

• 3 eggs (or to make these vegan, substitute a flax egg for each — mix 1 tbsp ground flaxseed meal with 3 tbsp water; let sit for two minutes, and use just as you would egg in a recipe)

• 1 small ripe avocado

• 1/3 cup and 1 tbsp unsweetened cocoa powder

• 1/4 tsp salt

• 1/4 tsp baking powder

• 1/4 tsp baking soda

• 1 tsp vanilla

• 3/4 cup white sugar

• 1/2 cup or so of dairy free chocolate chips for the top (optional)

• 1/2 cup brewed coffee, cooled (optional)

Directions

Preheat oven to 350 degrees. Grease 10×7 baking dish (I used Pam). Combine all ingredients except chocolate chips in food processor and blend til smooth. Pour into baking dish and top with chocolate chips (I used dairy free Enjoy Life mini chips). Bake 30 minutes or until top starts to crack and knife inserted in the middle comes out fairly clean. Let cool, then cut. Chill in refrigerator for best results — these are very good cold, almost like fudge!

But how do they taste?

These are decent at room temperature, but they are much better chilled! I highly recommend refrigerating the brownies at least a couple of hours and then giving them a try. They do not taste anything like black beans, but make a nice, chewy, fudge-like brownie.

Sneaky black bean avocado brownies also taste a lot better than a lot of the gluten-free mixes, not to mention a heck of a lot cheaper. (And, they’re also easier than making your own gluten free, dairy free baked goods from scratch with specialty flours and xanthan gum!)

My 10-year-old and 6-year-old both gave these their thumbs up! Try this with your own kids — don’t tell them what’s in these brownies, and they’ll never know there’s black beans and avocado in there.
